At DueLire Vino & Cucina, Chef Kevin Abshire is always on the search for unique and high quality products to showcase in his dishes. One such find is an organic honeycomb from Lonely Moon Organics on our’Pecorino’ crostini, one of our many new spring menu items.
Lonely Moon Organics is a local, multi-faceted farming operation dedicated to sustainable agricultural practices, wildlife conservation and a balanced relationship between the farmer, the livestock and the land. This operation, located just south of Charleston, IL, currently focuses primarily on honeybees. By implementing a chemical free approach (which is not found in most commercial beekeeping practices) a higher quality, premium honey is produced. These bees also receive a lot of ‘love’…the level of care and attention these bees receive also contributes the premium end product.
The commitment to quality, attention to detail and focus on sustainability are all important qualities to the products we serve in our restaurant. This organic honeycomb is currently co-starring in our new “Pecorino’ crostini along with a beautiful Hidden Springs organic sheep’s milk cheese (a topic for a future blog!) And fresh English peas. This combination of sweet yet delicate flavors screams spring!
This is a definite must try dish on your next visit. Pair this with a glass of ‘Triade’, a Falanghina-Fiano-Greco blend and soak in the season of spring (and maybe even on the patio…weather permitting, of course!)
